Thai Red Cabbage and Carrot Slaw

INGREDIENTS

For the Salad:

  • 1/2 head shredded red cabbage

  • 4 carrots grated or use a peeler

  • 1 small finely sliced red onion

  • handful fresh mint roughly chopped

  • handful fresh basil roughly chopped

  • handful fresh coriander roughly chopped

  • sprinkle of sesame seeds, sliced spring onions and extra herbs for garnish

For the Dressing:

  • zest and juice of lime 2 large limes

  • 2 tablespoons rice wine vinegar

  • 1 tablespoon fish sauce

  • 1 tablespoon honey

  • 1 1/2 teaspoons sesame oil

  • 1 tablespoon fresh grated ginger

  • 1 grated clove of garlic

  • 1 or 2 fresh chopped chilies (optional)

INSTRUCTIONS

  • Place in a large mixing bowl all the chopped/sliced salad ingredients

  • in a separate bowl bowl add all the dressing ingredients and mix well

  • only just before serving pour the dressing onto the salad and toss gently

  • top with fresh herbs and spring onions to serve
