Thai Red Cabbage and Carrot Slaw
INGREDIENTS
For the Salad:
1/2 head shredded red cabbage
4 carrots grated or use a peeler
1 small finely sliced red onion
handful fresh mint roughly chopped
handful fresh basil roughly chopped
handful fresh coriander roughly chopped
sprinkle of sesame seeds, sliced spring onions and extra herbs for garnish
For the Dressing:
zest and juice of lime 2 large limes
2 tablespoons rice wine vinegar
1 tablespoon fish sauce
1 tablespoon honey
1 1/2 teaspoons sesame oil
1 tablespoon fresh grated ginger
1 grated clove of garlic
1 or 2 fresh chopped chilies (optional)
INSTRUCTIONS
Place in a large mixing bowl all the chopped/sliced salad ingredients
in a separate bowl bowl add all the dressing ingredients and mix well
only just before serving pour the dressing onto the salad and toss gently
top with fresh herbs and spring onions to serve
